Swiss Cheese: Where Tradition and Quality Meet

 

This February, we're raising our glasses to Swiss cheeses at The Cheese Lady. Allow me to share my ode to Swiss cheese.

In the picturesque landscapes of Switzerland, where lush green pastures meet towering Alps, lies a tradition as rich as the soil itself – the art of cheesemaking. Swiss cheeses are not just products; they're a testament to a heritage deeply rooted in uncompromising quality and purity.

 As highlighted in my book The Cheese Connoisseur’s Handbook, the Swiss hold their cheese to exceptionally high standards. Since 2002, the Swiss cheesemaking industry has voluntarily banned the use of all artificial colourings and preservatives. This commitment to purity is enshrined in their industry code, a testament to their dedication to crafting cheeses of unparalleled quality.

What sets Swiss cheese apart is not just what is excluded from it, but also what goes into it. The chemical purity of the milk, combined with strict animal welfare laws and outstanding feed, ensures that every drop of milk used in Swiss cheesemaking is akin to 'white gold'. This pristine milk serves as the foundation for cheeses that are not only complex but also wholly natural – a rare find in today's food landscape.

The Swiss cheese industry code goes beyond mere restrictions; it's a promise of authenticity. Genetically produced rennet, additives to prevent undesirable fermentation, artificial colourings, and surface treatment additives are all banned, ensuring that Swiss cheeses remain true to their origins and natural flavours.

But it's not just about what's banned; it's about what's embraced. Swiss cheesemakers pride themselves on their heritage and tradition, using age-old techniques passed down through generations to create cheeses that are as unique as the land from which they hail. From the creamy sweet smoothness of Emmentaler to the bold flavours of L’Etivaz, Swiss cheeses are a testament to the craftsmanship and dedication of those who make them.
